Saliva

The Food Softener

Some people, like Asokan Chillikadan of Kerala, can blow saliva bubbles continuously for hours together, and some people have got into the record books for their ability to spit further than anyone else in spitting contests. But the body produces saliva to serve a more useful if less glamorous purpose: to aid in digestion of food.
Saliva moistens and softens the food and begins the process of digestion of starch by converting it into simple sugars. This is one of the reasons why food should be chewed slowly. The saliva should be given time to act on the food. About a litre of saliva is produced each day by three pairs of glands in the mouth
